3/4 C. Pearl Barley
3/4 C. Rice
1 C. canned Black Beans
1 C. canned Kidney Beans
1 C. Corn Kernals
1/3 C. Cilantro
1/2 C Green Onions (optional)
1 C Red Bell Pepper
Dressing
1/3 C. Red Wine Vinegar
1 Garlic Clove
1 tsp Chili Powder
1 tsp salt
1/2 C. Olive Oil
Cook barley, and rice. Mix black beans, kidney beans, rice and barley. In a large bowl , whisk together vinegar, garlic, chili powder, and salt. Whisk in oil and pour over salad and toss well. Transfer to a lettuce- lined bowl to serve.
